The recipe

Butterkipferl I always wanted to bake myself, but I always didn't really dare. Eventually I experimented with some recipes and made my own out of them. 

I'm presenting this to you here now. I think it's become quite good. In any case, the Kipferl of the whole family tasted very good and were eaten in the nu. 

 

Recipe:

 

100g butter

1/2 cube of fresh yeast or 1Pkg dry yeast

3 eggs

250g wheat flour

 

 

100g spelt flour

70ml milk

40g sugar

Slowly heat the butter together with the milk to a maximum of 35 degrees Celsius and wait until the butter has melted.

Then add the yeast and mix well until the yeast has dissolved.

Preparation

Put the flour, sugar and eggs in a mixing bowl.

Now add the prepared mixture of butter, milk and yeast and mix with the food processor.

Mix the mixture now for 10 min. 

Now form a ball from the resulting dough and let it go at room temperature for 1h.

Tip:

In order to have an optimal temperature for the maturation of the dough, you can have the oven heated briefly to 50°C at the beginning of the dough preparation and then switched off. Place the finished dough in the residual heat of the already slightly cooled oven for 1h. 

Shapes and splittings

Now the oven is first set to 180°C top and under heat and preheated.

Remove the raised dough from the bowl and place it on a lightly floured worktop. There, divide the amount of dough into 6-8 portions and form a ball from each serving.

If you divide the dough into 8 portions, you get about 80g per kipferl. I think that's a good amount. If you like to have it bigger, you can also divide the dough into 6 portions. 

The individual balls are now thinly rolled out and rolled tightly from the long to the short side to get the typical shape of a kipferl. They are then bent and placed on a baking sheet lined with baking paper. 

When all are rolled out and brought into the typical shape, they are still coated with milk on the baking sheet and then come into the oven at the previously set temperature for about 15 min until they are baked golden yellow.

So, now you can enjoy the result yourself.

The kitchen smells really wonderful when you bake the butter kipferl.
