Yoghurt Strawberry Cake

The recipe

I wanted to try something new again and thought about what I could do. Then I came up with the idea of doing something that is not too complicated and still looks good and tastes good in the end. 

The result is an airy light stir-fry cake made with yoghurt, filled with delicious strawberry jam and at the end encased in white couverture. 

A delicious treat for coffee.
And a real eye-catcher.

Dough:

100g caster sugar

50g butter

2pcs eggs

1Pkg vanilla sugar (Bourbon vanilla sugar)

3/4 pack baking powder

75g yoghurt

200g flour

50ml milk

Filling:

500g strawberries

50g sugar

2cl water

 

Coating:

150 – 200g white couverture

Preheat the oven to 180°C over and down heat.

Add the eggs to the mixing bowl along with the icing sugar and vanilla sugar and beat frothy. Now add the yoghurt and mix.

Then slowly alternately add the flour and baking powder and mix to a homogeneous mixture.

Then add the milk and stir.

Place the finished dough in the well greased baking dish and place in the preheated oven for approx. 30 min in the over and under heat. 

The time depends a little on the size of the baking dish. With my small baking dish it only took 25 min. If the baking tin is larger it can also take 35 – 40 min. 

It is best to do the sample with a knitting needle or with a wooden stick if the dough on the top is already a little brown. Stick the wooden stick to the bottom of the mould and pull it out again. When no more dough sticks to the stick, the dough is baked ready. 

When the cake is baked, it is taken out of the oven and placed on a grid. Now it has to cool down at least 1h. Only then can we safely take the cake out of the mould without it breaking. 

In the meantime, we have enough time to take care of the filling.To do this, we put 400g of frozen strawberries in a saucepan and add 2cl of water and 50g of sugar.Let us bring the whole thing to the boil over a medium heat, stirring, and then simmer for about 5-10 min. 

If the cake is out of the mould without an accident, we cut the cake horizontally in the middle.To do this, please use a very sharp knife so that the dough does not break.  Before the next steps, you can put a pot of hot water on the highest level of the stove and put a plate over it and put the couverture in it for melting.

Now spread the underside generously with the homemade strawberry jam and also brush something on the top, so that when they are put together, they do not immediately absorb everything. 

Then we put the halves on top of each other again. 

When the couverture has melted, spread the cake as evenly as possible around it and then place in a cool place to cool.

When the couverture is cooled, the cake can be cut and enjoyed.

Unfortunately for me, the couverture has not become very even. This is probably due to the fact that she was in the water bath for too long and thus had a firmer consistency on the bottom of the plate.

Then, unfortunately, it can't pass so nicely.

But I didn't want to deny you the delicious cake anyway. I don't always succeed perfectly.

It hasn't stopped the taste. He was very tasty.

P.: I baked the same cake as a big gummy bear, because my son had been given a gummy bear baking dish for his birthday. Is maybe also a funny idea for a children's birthday 🙂
