Whole grain toast bread



The recipe

When I think of toast bread, I already have the scent of the lightly roasted bread in my nose. 

I can see the bread right in front of me as it comes from the toaster. Golden brown with slightly darker corners. 

Then a slice of cheese or some Nutella or jam. 

Simply delicious.  

And if it is still a healthy whole grain – toast bread, nothing stands in the way of enjoyment.


150g spelt flour

150g rye flour

300g wheat mehrl type 550

50g butter

200 ml water


150 ml milk

1 tbsp sugar

15g salt

1 pck. Dry yeast

50g flaxseed scraped

50g sesame

Weigh the various flours and place in the mixing bowl of the food processor. Add the salt and melt the butter in the microwave lightly when it comes out of the fridge. 

Put the dry yeast in a container with the water and sugar, mix well and leave to activate for about 5 min. 

Then add the yeast-water mixture and then the milk to the mixing bowl. 

As a special highlight you can add the scraped flaxseed and sesame. This gives a very good taste and makes the toast bread all the healthier. 

Now mix everything into a smooth dough (approx. 7min)

Then cover the dough and let the room temperature go about 1 – 1.5 h. 

Then add the dough to the greased baking dish and leave covered for another 45 min.
In the meantime, preheat the oven to 180°C over and under heat

After the dough has risen, place a pot of water on the bottom of the oven and place the box in the middle of the oven on the baking rack. Bake for about 35 – 40 min, then remove and leave to cool.

If everything went well, your toast should look similar to the picture.
